Egg Stew ไข่พะโล้[แก้]

Stew is a Chinese cooking recipe that spreads out through all China regions and becomes popular in Thailand. One of the basic processes to make this stewed soup famous is to simmer the brown sugar, salt, soy sauce and meat or other ingredients to mix thoroughly with enough five spices into the pot. Egg is also one of the top list ingredients that people usually cook (พะโล้, n.d.) [1]

Egg stewed is one of the most famous dish that almost every Thai restaurant has in their menu list. Making a delicious egg stew is not difficult if you know the tips. Eggs stew with traditional recipes can be made with the aroma concentration coming out better than the instant ingredients (ไข่พะโล้สูตรโบราณ สูตรที่ 2, n.d.)[2]

Ingredients[แก้]

1.     12 Duck eggs or chicken eggs

2.     500 grams of pork belly

3.     1 piece of white tofu

4.     10-15 lobe of small garlic, 1 teaspoon of pepper, 7-8 roots of celery

5.     2 stalks of cinnamon

6.     8-10 of star anise

7.     2 ladle of sugar

8.     Salt and soy sauce

9.     1 teaspoon of vegetable oil

10.  1.5-2 liters of water

Process[แก้]

Preparation

1.     Prepare the ingredients.

Boil egg and put salt in while boiling the eggs. Wait for 10 minutes then soak the eggs in cold water immediately and then peel off and  let it rest

2.     Clean the pork belly, then it cut into thick pieces or larger pieces as needed.

Simply fry the tofu pieces until it turns yellow

3.     Cook rice and let it rest

4.     Put the star anise and cinnamon into the fabric bag

5.     Start to pound the spice from pounding the pepper into find powder, followed by celery roots, garlic and a little bit of salt

6.     Set the medium heat, add the oil and pounded ingredients then stir, be careful not to use too high heat, because it will make the distorted smell burn

7.     Set the medium heat, add the sugar, continuously stir them until they turn brown then put in the pork belly and followed by boiled eggs

8.     Pour in water

9.     Put the white tofu in

10.  Put in the fabric bag into the pot

11.  Simmer them well for 1 hour

12.  Ready to serve.
