Saccharomyces cerevisiae เป็นสปีชีส์ของยีสต์ที่ใช้ทำไวน์ เหล้าหรือเบียร์ ขนมปัง และเบเกอรี่อื่น ๆ ตั้งแต่สมัยโบราณ เชื่อกันว่าแต่เดิมถูกนำมาจากเปลือกขององุ่น (ยีสต์ดูเหมือนแผ่นขาว ๆ บนเปลือกผลไม้สีเข้ม เช่น บนลูกพลัม) นับเป็นหนึ่งในสิ่งมีชีวิตแม่แบบสำหรับการศึกษาเซลล์ของยูคาริโอตที่ถูกศึกษามากที่สุดเป็นอันดับต้น ๆ ในอณูชีววิทยาและชีววิทยาของเซลล์ คล้ายกับ Escherichia coli ที่ถูกเรียกว่าเป็นสิ่งมีชีวิตแม่แบบของแบคทีเรีย S. cerevisiae เป็นจุลินทรีย์ซึ่งอยู่เบื้องหลังการหมักที่พบได้ทั่วไป โดยเซลล์มีตั้งแต่ทรงกลมไปจนถึงรี ขนาดเส้นผ่าศูนย์กลางประมาณ 5–10 ไมโครเมตร และสืบพันธุ์โดยการแตกหน่อ (Budding)[1]

Many proteins important in human biology were first discovered by studying their homologs in yeast; these proteins include cell cycle proteins, signaling proteins, and protein-processing enzymes. S. cerevisiae is currently the only yeast cell known to have Berkeley bodies present, which are involved in particular secretory pathways. Antibodies against S. cerevisiae are found in 60–70% of patients with Crohn's disease and 10–15% of patients with ulcerative colitis (and 8% of healthy controls).[2]
