ถั่วแปบ เป็นชื่อไม้เถาชนิด Dolichos lablab L. ในวงศ์ Leguminosae ดอกสีม่วงฝักแบน ๆ ภาษากะเหรี่ยงเรียก เบ่าะบาสะ ถั่วแปบเป็นพืชตระกูลถั่วที่มีแหล่งกระจายพันธุ์มาจากประเทศอินเดีย แล้วจึงกระจายพันธุ์ไปทางภูมิประเทศแบบเขตร้อนหรือร้อนชื้น ถั่วแปบมีโครโมโซมเป็นดิพลอยด์ (2n=22) จำนวน 11 คู่ ที่มีอายุข้ามปี โดยทั่วไปมี 2 ชนิด คือถั่วแปบเขียว (สีฝักจะมีสีเขียวเข้ม) และถั่วแปบขาว (ลักษณะฝักจะมีสีเขียวซีดขาว)

ลักษณะทางพฤกษศาสตร์

ต้นถั่วแปบมีลำต้นเป็นไม้เลื้อยลำต้นบิด มีขนเล็กน้อย สูงประมาณ 1.5 เมตร - 3 เมตร บางพันธ์อาจสูงได้ถึงประมาณ 9 เมตร ลักษณะของใบ เป็นใบประกอบ 3 ใบ คล้ายรูปไข่ปลายเรียวแหลม ดอกมี 2 ชนิดคือ ชนิดดอกสีขาว และชนิดดอกสีม่วง เมล็ดอ่อนจะมีสีเขียว เมื่อแก่จะมีสีน้ำตาลเข้ม หรือเป็นสีดำเมื่อแก่จัด

การใช้ประโยชน์

ฝักอ่อน เมล็ด ใช้ประกอบอาหาร เช่นแกงส้ม ผักลวกจิ้มกับน้ำพริก ใช้เป็นสมุนไพรบำรุงร่างกาย แก้อ่อนเพลีย บำรุงธาตุ แก้ไข้ แก้อาการแพ้ ปลูกเป็นพืชอาหารสัตว์ ปลูกเป็นพืชสำหรับทำปุ๋ย หรือเป็นพืชเพื่อการอนุรักษ์ดินและน้ำ

สารอาหาร

ถั่วแปบเป็นพืชตระกูลถั่วที่ให้สารอาหารทางโปรตีนสูง คาร์โบไฮเดรต (กลูโคส กาแลกโทส และกลูตามิเนส) ไขมันชนิดฟอสฟาไทด์ แร่ธาตุ ได้แก่ แคลเซียม เหล็ก ฟอสฟอรัส สังกะสี รวมไปถึงวิตามินเอ วิตามินบี วิตามินซี กรดแพนโรทีนิค

ถั่วแปบยังพบว่ามีสาร ไฟโตฮีแมคกลูตินิน (Phytohemagglutinine) ที่ช่วยในการเร่งการผลิตเม็ดเลือดขาวของร่างกาย ลำต้นของถั่วแปบยังพบว่ามีสารแคโรทีน หรือบีตา-แคโรทีน และสาร ลูเทียน (Lutein) ในส่วนของรากถั่วแปบมีเอนไซม์ชนิดหนึ่ง และกรดอะมิโนแยกอิสระอีกหลายชนิด จึงเหมาะแก่การปลูกถั่วแปบเพื่อบำรุงรักษาดิน
