English: Khanom chin nam ngiao (Thai script: ขนมจีนน้ำเงี้ยว): A speciality of Northern Thailand, it is Thai fermented rice noodles served with pork or chicken blood tofu in a sauce made with pork broth and tomato, crushed fried dry chilies, pork blood, dry fermented soy bean, and dried red kapok flowers. Raw vegetables, such as cabbage, bean sprouts and cha-om (Acacia leaves) are served on the side.
It is considered a kaeng in Thailand, which loosely translated means "curry".
