ต้นชา (ชื่อวิทยาศาสตร์: Camellia sinensis)เป็นพืชที่นำใบและยอดอ่อนไปผลิตเป็นชาจีน อยู่ในสกุล Camellia (ภาษาจีน: 茶花; พินอิน: Cháhuā, ตรงตัว: "ดอกชา") และอยู่ในวงศ์ Theaceae ชาขาว ชาเขียว ชาอูหลง และชาดำถูกเก็บเกี่ยวจากพืชสปีชีส์นี้ทั้งหมด แต่กระบวนการผลิตต่างกัน ทำให้มีระดับของปฏิกิริยาออกซิเดชันต่างกัน กูกิชะ (Kukicha)ทำมาจากต้นชาชนิดเดียวกันแต่ใช้กิ่งและก้านแทนใบ มีสองสายพันธุ์คือ ชาจีน (Camellia sinensis var. sinensis) และชาอัสสัม (Camellia sinensis var. assamica)
